Banana and Blueberry Pancakes

My kids absolutely love cooking with me, but often they’ll get bored before the process is done, and  they’ll ALWAYS grumble for the entire hour or so that it takes the cake to bake. But thanks to A Girl Called Jack, I’ve discovered a recipe that is short and easy enough that they can pretty much do it all themselves – and has the added bonus of having a cooking time of just a few minutes. Best of all from my point of view, it’s a one-bowl recipe – so without further ado, ladies and gentlemen, I give you Banana and Blueberry Pancakes!

First, take 2 bananas and chop into slices and then quarters, before sticking them in a bowl with a couple of handfuls of blueberries.

Next, add 200g of self raising flour, and mix until the bananas and blueberries are well coated.

Add 2 eggs and 200ml milk:

And mix together until there are no lumps of flour and the batter has turned a pleasing shade of blue!

Finally, melt a tiny bit of butter in a flat pan, and get cooking! I used a tablespoon of batter per pancake, as suggested by A Girl called Jack in the original recipe, which means I could cook three pancakes at a time:

The pancakes  take two or three minutes on each side; and if you stack them up on a warm plate and cover them with tinfoil, they’ll stay hot until you serve them – we had squeeze honey with ours but you could always add a bit of zing with some lemon and sugar, or even go for maple syrup if you’re feeling flush.

The five of us ate these for breakfast this morning, though next time I’d increase the quantities as we could all definitely have eaten more!

Banana and Blueberry Pancakes – What you’ll need: (serves 4)

2 bananas
A good handful of blueberries – we used frozen ones
200g self raising flour (or use plain, with a teaspoon of baking powder or bicarb)
2 eggs
200ml milk
Butter or oil to grease the pan
Honey to serve

Mixing bowl
Knife
Sieve
Metal spoon for mixing
Pancake pan
Spatula or other flipping implement
Warm plate & tin foil

      1. Just an update, I did make them with my student during his practical lesson after cooking Spaghetti Bolognese. I really fancied something sweet and quick, so we went for this recipe, and oh my god it tasted absolutely amazing. Plus the rest was pretty much flying off the plate, when his family came back home.I shall definitely be making them again.x
